Standing in front of the cheese counter at Central Bottle last night, I realized how much I've learned from Liz Thorpe in the past month. I had already reserved the last piece of Twig Farm Square in the store. The space it had occupied was filled by a freshly-cut, Twig Farm Fuzzy Wheel. This was a new cheese to me, but I already knew it had some cow's milk, because I'd read that in the book's profile of cheesemaker Michael Lee.
Ed and I have become students of cheese over the past few years. After rounds of tasting and reading about what we've tasted, we're progressing to studying cheese in a broader way. This book will be one of our core texts as we probe the history, traditions, culture and artistry of what milk can become in highly skilled hands.
Liz makes learning about cheese fun. She's a great storyteller, a skillful writer, and a good companion on our cheese explorations. I recommend this book to anyone with an interest in cheese, sustainable food, or artisan food production.
