A big pot of chicken soup and a jug of Asian chicken stock are perfect staples for a cold spell.
But, do you find yourself bored with a pot of soup on day two or three?

Try keeping the choice of starch you add to the soup open.
Cook and store your rice, noodles, pasta or grain separately. This keeps the starch from becoming soggy and absorbing all the broth from the soup.
It also lets you play with the ways you present the dish. You can add more vegetables, beans or pasta to give it new look and feel. Or, thicken it a bit and serve with biscuits in country style. Finally, you can use up leftovers in the fridge to add zest.
This week I cut leftover polenta into cubes and served them in chicken soup. It was a hit.
The jug of stock can pair with pastina for a light meal. Or you can microwave a cup to sip on as a warming drink.
