Who knew, that after a couple of visits to The Dining Car food truck, you could develop cravings for cauliflower?
Dining Car chefs, David Harnik and Naomi Close coat the flowerettes in a light corn meal batter, quick fry them, and decorate with a great sauce. (We did without the sauce, because of an allergy, but still enjoyed every bite.)
The process intensifies and sweetens the vegetable in the same way roasting does. And, this team manages to deliver them from the fryer without the grease. Instead, you get a light, crisp, dry crunch.
We saw customer after customer enjoying a basket of cauliflower as an afternoon snack.
It also makes a great alternative to french fries with one of their pulled pork sandwiches.
