In keeping with our resolution to celebrate more and drink more sparkling wine, we'll tell you about our February 1st sparkling wine. Here's the post where you can learn more about our New Year's resolution.
This month's selection, Avinyo Cava Brut, was found at the Wine Bottega on Hanover Street in the North End for $17. We'd certainly buy it again. It had a lovely toasty nose, was full flavored and bone dry! We enjoyed it with tomato crostini and pan-fried flounder. The dressing on the tomatoes for the crostini didn't work well with the wine but the fish and cava were wonderful together. (Local Catch- Gloucester flounder was on sale at River Street Whole Foods and was perfection!)
We had a second round with some lovely Jasper Hill Constant Bliss Cheese. There again it was a great match. (More on the cheese later this week)
Here are the winemaker's notes. "All fruit for the Cava was harvest under optimal conditions. 100% free run juice. Aged 18 to 22 months before being disgorged. Dosage of 6 grams of sugar per liter.Bright white fruits combine with toast notes. On the palate the wine is fresh and vibrant."
Small things that give us pleasure are important -- even in tight money times. We enjoy our bottle chiller and champagne stopper every time we use them.

"Avinyó Cava is a pearl of a wine, a rare bubbly that exhibits both delicacy and finesse, as well as the artisan purity for which Catalonia is renowned."

"Greenish-yellow. Musky citrus and pear aromas are complicated by dried flowers and herbs, with an earthy undertone. Dry and focused, with firm lemon and pear skin flavors putting on weight with air. Finishes with good grip but no hardness, echoing the floral and citrus qualities. This is wonderfully pure and persistent, not to mention solid value."
